A very refreshing soup.

3 cups fresh blueberries (or frozen blueberies in off season)
1 cup orange juice
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoon fresh lemon juice
1 pint half-and-half
Mint sprigs for garnish

Place blueberries, orange juice, sugar, cinnamon and salt in a saucepan and bring to a complete boil over medium-high heat, stiring often. Remove from heat and cool slightly. Process blueberry mixture and lemon juice in a blender or food processor until smooth, stopping to scrape down sides. Cover and place in refrigerator until chilled completely. (The blueberry mixture can be made a couple days in advance.) Stir in half-and-half just before serving. Garnish with mint sprigs. Makes 4 servings.
