A chilled summer soup that uses a bounty of vegetables from the market. Recipe contributed by Kathy Benton, a market customer.
2 large cans V-8 juice
1 beef bouillon cube
2 large tomatoes, chopped
1 cup chopped cucumbers
1 cup chopped green peppers
1 cup chopped onions
3 tablespoons red wine vinegar
1 teaspoon salt
2 tablespoons Worcestershire sauce
1 teaspoon hot pepper sauce (more if a hotter taste is desired)
Heat the V-8 juice. Dissolve the bouillon cube in the juice. Chill. Add the remaining ingredients and chill thoroughly. Serve cold.
