A wonderful fall dessert…or side dish for ham, pork or turkey.

4 firm baking apples
2 cups granola
1/2 cup chopped dried figs
1/4 cup dark brown sugar
4 tablespoons butter, melted
1/2 teaspoon vanilla extract
1-1/2 cups apple cider

Preheat oven to 350 degrees. Cut apples in half, cutting through stem and bottom. Scoop out core and some of the pulp, leaving a 1/4-inch shell. Place apples in baking dish. In a medium bowl, stir together granola, figs, brown sugar. butter and vanilla. Spoon granola mixture into apple halves. Pour cider around apples and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for 20 to 25 minutes longer or until apples are tender.
