A refreshing summer salad.

1/4 cup lime juice
1/4 cup chopped fresh mint
1/4 cup minced fresh chives
3 tablespoons olive oil
10 cups cubed watemelon (seedless or seeded with seeds removed)
8 ounces feta cheese, crumbled
 
In a large bowl, whisk together lime juuice, mint, chives and olive oil. Add cubed watermelon, tossing to coat. Gently stir in feta cheese. Cover and chill unti ready to serve. Makes 8 to 10 servings.
