This delightful dish contains fresh summer vegetables in every bite.

1 deep-dish pie crust, unbaked
4 eggs beaten
1 cup milk
1/4 teaspoon salt
Dash of pepper
1/2 pound shredded Colby jack cheese
1 medium yellow summer squash, chopped
1/2 onion, chopped
1/2 cup mushrooms, chopped
1 medium tomato, chopped
Salt and pepper to taste

Preheat oven to 350 degrees. While oven is heating, beat eggs in a large bowl and chop all vegetables. Add all ingredients to the eggs and stir until well mixed. Pour into the pie crust. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
