Matchstick zucchini and carrots make a colorful salad.
1 pound zucchini
2 cups matchstick carrots
1/2 cup Catalina dressing, or to taste
2 tablespoons thinly sliced fresh chives
Kosher salt and freshly ground pepper
1/2 cup French fried onions
Cut zucchini lengthwise into matchstick-thin strips. Toss together zucchini, carrots and dressing; let stand 20 minutes, tossing occasionally. Sprinkle chives over zucchini mixture and add salt and pepper to taste. Top with French fried onions.
1/2 cup olive oil
1/4 cup sugar
1/4 cup ketchup
1/4 cup red wine vinegar
1/4 cup grated sweet onion
1/2 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
Salt and pepper to taste
Whisk all ingredients together.
